ABOUT OUR SYSTEMS
When Certified Executive Chef Bertrand Artigues first set out to open a wine bar, he knew he would do it right. In his extensive travels, he often noticed that restaurants of nearly every caliber failed to handle their wines properly. Most kept bottles sitting out on counters or shelves behind the bar, or kept white wines chilling in ice bins. Even high-end establishments with climate-controlled cellars stored open bottles this way. Usually, the bartenders would pour a glass and stuff the original cork back in the bottle and leave it on the counter. The problem? Once that bottle of spectacular, glorious drink is opened, it does not keep well. As the wine comes in contact with oxygen, it breaks down--it loses flavors and after just a day or two goes bad. At Cloud 9, we use a number of systems to ensure that our extensive list of wines by the glass are properly preserved for your enjoyment--from the first glass to the last! -
DRAUGHT WINE
Cloud 9 is only the third restaurant in the state to offer draft wine--it's on tap!
Draft wines--or wines packaged in kegs (just like beer)--provide consistency in every glass so that you experience the wines exactly as the vintner intended with every pour. Our unique draft wine system serves up wine at the proper drinking temperature with no risk of oxidizing so it doesn't lose any integrity or flavor over time. Wine on tap is also environmentally friendly because one keg of wine keeps 26 bottles out of your local landfill--along with corks, labels, and foil wrappers!
*Draft wines are all 1/2 price during our daily happy hour from 4:00 to 6:00 p.m. (and when we say daily, we mean EVERY DAY--including Saturday & Sunday)!

LE VERRE DE VIN
Wine begins to oxidize as soon as the cork is removed. By removing the oxygen to a precisely controlled level, Le Verre de Vin technology effectively preserves wine without any risk to its subtle structure. With this piece of wall-mounted equipment, we are able to offer you a much wider selection of wines by the glass--without compromising quality! -
CRUVINET
Our 16 bottle cruvinet system is a custom-built, dual-chamber, temperature controlled wine preservation system that works much like a keg system. This spectacular piece of equipment that is the centerpiece of our bar pumps nitrogen into the opened bottle of wine as the wine is extruded through a set of tubing. This creates a barrier of gas between the wine and potential oxygen, therefore, extending the life of the wine for as long as six weeks. -
